Claim Jumper is a restaurant chain headquartered in California with 45 locations through out the western states. They are known for a large menu with a wide range of foods. The menu features a wide range of foods, including sandwiches, pizzas, and salads, but focuses mainly on meats such as steaks, and ribs. They have become well known for their signature desserts. Claim Jumper has licensed its name to frozen food producer American Pie, LLC to create a line of frozen dinners, which are sold in grocery stores.

California Quesadilla


CALIFORNIA QUESADILLA

Claim Jumper Copycat Recipe

Serves 8

1 small ripe avocado
6 ounces cream cheese
3 tablespoons Frank’s Redhot pepper sauce
1/4 cup minced fresh cilantro leaves
16 (6 inch) flour tortillas
1 cup shredded cheddar cheese or 1 cup monterey jack cheese
1/2 cup finely chopped green onion
sour cream
shredded cooked chicken breast, optional
salsa

Pit avocado and scoop it out. Put in a food processor or mix by hand with the hot sauce and cream cheese. Beat until smooth and add the cilantro. Spoon mixture onto a tortilla, sprinkle some cheese and green onion and add the chicken if using. Top with another tortilla. Place tortillas on grill over medium coals for 5 mins or until cheese is melted. Serve with sour cream and salsa.

Notes:  Claim Jumper serves these with black beans.

Broccoli Salad


BROCCOLI SALAD
Claim Jumper Restaurant Copycat Recipe

Dressing:
1 1/2 cups mayonnaise
1/2 cup sugar
4 tablespoons red wine vinegar

Salad:
2 heads broccoli, trimmed and cut into flowerettes
3/4 cup drained water chestnuts, chopped
1/3 cup cashews
3/4 cup raisins
2 cups red seedless grapes
7 slices cooked bacon, crumbled
1/2-3/4 cup red onion, chopped

Combine mayonnaise, sugar and red wine vinegar in medium bowl. Set aside.

In large bowl, mix broccoli, water chestnuts, cashews, raisins, grapes, bacon and onion.
Pour dressing over salad and toss to combine. Store covered in refrigerator at least 2 hours before serving. Makes 6-8 servings.

Hawaiian Punch Cocktail



HAWAIIAN PUNCH

1/2 ounce Southern Comfort
1/2 ounce sloe gin
1/2 ounce amaretto liqueur
3 ounces pineapple juice
3 ounces orange juice
splash Bacardi 151 Rum
pineapple juice, for garnish
maraschino cherry, for garnish
paper umbrella for garnish

Fill a 16 ounce glass with ice. Pour all ingredients over ice in the order listed. Do not stir.
Garnish with a pineapple slice and maraschino cherry speared on a paper umbrella.

Bermuda Sunset Cocktail

1/2 ounce Bacardi Limon rum
1/2 ounce Midori liqueur
1/2 ounce peach schnapps
2 ounces pineapple juice
2 ounces orange juice
2 ounces cranberry juice
splash Bacardi 151 rum
pineapple slice, for garnish
maraschino cherry, for garnish
paper umbrella, for garnish

Fill a 16 ounce glass with ice. Pour all ingredients over ice in the order listed. Add a garnish of pineapple slice and maraschino cherry on a paper umbrella.

Electric Lemonade



ELECTRIC LEMONADE

2 ounces Absolut Citron vodka
1 ounce blue curaƧao liqueur
6 ounces fresh lemonade
1 lemon slice, for garnish

Fill a 16 ounce glass with ice. Pour all ingredients in the order listed over the ice. Garnish the rim with a lemon slice that has been slit with a knife to the middle

Yukon Blend Marinade



YUKON BLEND MARINADE

1 1/2 cups KC Masterpiece BBQ Sauce
1 cup Italian salad dressing, any variety
6 ounces soy sauce
6 ounces beer, any variety
3 ounces Worcestershire sauce
1/2 cup lemon juice
2 teaspoons garlic, minced
salt and pepper to taste

Combine ingredients. Add desired meat and marinate at least 1 hour before cooking.
