Claim Jumper is a restaurant chain headquartered in California with 45 locations through out the western states. They are known for a large menu with a wide range of foods. The menu features a wide range of foods, including sandwiches, pizzas, and salads, but focuses mainly on meats such as steaks, and ribs. They have become well known for their signature desserts. Claim Jumper has licensed its name to frozen food producer American Pie, LLC to create a line of frozen dinners, which are sold in grocery stores.

Spinach and Artichoke Dip


SPINACH ARTICHOKE DIP 
Claim Jumper Copycat Recipe

Tomato Relish:
1 medium tomato, diced (about 1/2 cup)
1 clove garlic, minced (about 1 teaspoon)
1 teaspoon minced onion
2 basil leaves, minced
1/2 teaspoon olive oil
1/2 teaspoon balsamic vinegar
1/4 teaspoon salt
dash ground black pepper

Prepare the tomato relish by combining all of the ingredients in a small bowl. Stir well, then cover and refrigerate until needed.

Spinach and Artichoke Dip:
1 cup water
1 cup thawed, chopped frozen spinach
1 1/2 cups frozen artichoke hearts, thawed and coarsely chopped
1 clove fresh garlic minced
6 ounces cream cheese
1/4 cup sour cream
1/4 cup mayonnaise (traditional but optional)
1/2 fresh lemon, juiced
1/3 cup freshly grated Parmesan cheese
1/4 teaspoon freshly ground black pepper

In a saucepan boil spinach, artichokes and garlic in 1 cup of water until tender (just a few minutes) and drain well. Discard liquid. In a microwave safe bowl, heat cream cheese in microwave for 1 minute or until hot and soft. Stir in the rest of the dip ingredients top with the tomato relish. Serve with toasted bread and tortilla chips.
