Claim Jumper is a restaurant chain headquartered in California with 45 locations through out the western states. They are known for a large menu with a wide range of foods. The menu features a wide range of foods, including sandwiches, pizzas, and salads, but focuses mainly on meats such as steaks, and ribs. They have become well known for their signature desserts. Claim Jumper has licensed its name to frozen food producer American Pie, LLC to create a line of frozen dinners, which are sold in grocery stores.

Goldrush Chicken


A Chicken Breast Topped with a Sour Cream Mushroom Onion Sauce and Mozzarella served with Mashed Potatoes, Roasted Vegetables and Buttermilk Biscuit.

Sour Cream Mushroom Sauce:
1/4 cup butter
1 lb mushroom, sliced
1 small onion, chopped
1/2 cup white wine
3 teaspoons dried parsley (or 1/4 cup fresh)
1/2 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, minced
1 tablespoon flour
8 ounces sour cream

Melt butter in a skillet over medium high heat. Add onions, mushrooms, and garlic. Saute for 5 minutes. Add wine, salt, and pepper. Cook stirring often for 4-5 minutes, or until wine is reduced by half. Stir in flour and cook for 1 minute. Add sour cream and parsley, stir well. Heat through and serve.

Notes:  The key to this Claim Jumper dish is the sauce which makes enough for 4 servings.  You may bake or grill the chicken and then top it with the sauce.
