Claim Jumper is a restaurant chain headquartered in California with 45 locations through out the western states. They are known for a large menu with a wide range of foods. The menu features a wide range of foods, including sandwiches, pizzas, and salads, but focuses mainly on meats such as steaks, and ribs. They have become well known for their signature desserts. Claim Jumper has licensed its name to frozen food producer American Pie, LLC to create a line of frozen dinners, which are sold in grocery stores.

Parmesan Crusted Chicken


Breaded Chicken Topped with a Tomato Spinach White Wine Sauce served  with Pasta and Garlic Cheese Toast.


PARMESAN CRUSTED CHICKEN
Claim Jumper Copycat Recipe

Serves 4

4 boneless skinless chicken breasts
1 ounce Japanese bread crumbs
2 ounce croutons crushed
1/4 ounce Parmesan cheese grated
1 ounce Parmesan shaved
egg wash as needed
flour as needed

In a mixing bowl, combine crouton dust, breadcrumbs and Parmesan cheeses. Dredge chicken breasts in flour and egg wash. Lay the chicken breast in the breadcrumb mix, then pat lightly so the breadcrumb mix adheres to the chicken breast. Bake in a 350 degree oven till cooked through.

Notes: To make the topping like the restaurant dish saute some diced tomatoes and spinach in a skillet with a bit of olive oil and a dash of white wine.

  1. I made this tonight almost exactly as the new directions say. I had baked chicken left over from Sunday dinner so I used cooked chicken instead of raw. I just added the chicken and the rice a little later. It was not too thick at all. In fact just perfect. I love soup. Will be a family favorite.
