PARMESAN CRUSTED CHICKEN

4 boneless skinless chicken breasts
1 ounce Japanese bread crumbs
2 ounce croutons crushed
1/4 ounce Parmesan cheese grated
1 ounce Parmesan shaved
egg wash as needed
flour as needed
In a mixing bowl, combine crouton dust, breadcrumbs and Parmesan cheeses. Dredge chicken breasts in flour and egg wash. Lay the chicken breast in the breadcrumb mix, then pat lightly so the breadcrumb mix adheres to the chicken breast. Bake in a 350 degree oven till cooked through.
Notes: To make the topping like the restaurant dish saute some diced tomatoes and spinach in a skillet with a bit of olive oil and a dash of white wine.
