Claim Jumper is a restaurant chain headquartered in California with 45 locations through out the western states. They are known for a large menu with a wide range of foods. The menu features a wide range of foods, including sandwiches, pizzas, and salads, but focuses mainly on meats such as steaks, and ribs. They have become well known for their signature desserts. Claim Jumper has licensed its name to frozen food producer American Pie, LLC to create a line of frozen dinners, which are sold in grocery stores.

BBQ Shrimp Enbrochette




BBQ SHRIMP ENBROCHETTE
Claim Jumper Copycat Recipe

Serves 6

2 pounds large shrimp, peeled, deveined and butterflied
1 (8 oz) package cream cheese, sliced
3 fresh jalapeno peppers, seeded and julienne cut

1 pound bacon, cut into thirds
1 teaspoon Cajun seasoning, or to taste
BBQ sauce to taste

Preheat a grill for high heat. Soak skewers in water.

Place a strip of jalapeno into the opening of butterflied shrimp and fill with cream cheese. Wrap with a piece of the bacon, and thread onto skewers so that the shrimp is pierced once through the head, and once through the tail, and bacon is secure. You can usually fit about 6 shrimp on a skewer. Make sure there is a little space between the shrimp, this will help the bacon cook better. Season both sides of the shrimp generously with Cajun seasoning.

Lightly oil the grill grate. Place shrimp skewers on the grill, and cook for 2 to 3 minutes on one side. Turn and baste with BBQ. Cook for another 2 to 3 minutes, until the bacon is browned.

Notes: Claim Jumper serves the shrimp on a bed of rice with grilled peppers and onions.  You can thread these on separate skewers to make this restaurant copycat recipe.
